I can’t tell you how many times I’ve opened a can of tomato paste to add a tablespoon to a recipe just to have the rest of the can mold in the refrigerator a few weeks later. I know cans of tomato paste aren’t exactly expensive but I hate the idea of wasting anything. The individual squeeze tubes seem like a good idea but it’s hard for me to justify the cost. I was so excited when Brad found this tip in Cook’s Illustrated.
After opening a can of tomato paste and using what you need for the current recipe. Remove the other side of the can and push the whole cylinder onto a sheet of plastic wrap. Wrap it up and throw it in the freezer – you can cut off a slice whenever you need it.
