Strawberry Spinach Salad with Goat Cheese and Poppy Seed Dressing

This has been our favorite salad the last few months and I think it will be a long time before we find anything better. It’s so fast and easy to put together but the simple ingredients combine for something very special.

Strawberry, Spinach, Goat Cheese Salad with Poppy Seed Dressing

In the past, I usually defaulted to balsamic vinaigrette for any salad that used strawberries but the poppy seed dressing really pulls this all together echoing the sweetness of strawberries and creaminess of goat cheese.  The crunchy almonds balance everything out.  For extra awesomeness I use Trader Joe’s honey roasted sliced almonds.

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 4 servings

Serving Size: about 2 cups

Calories per serving: 128

Fat per serving: 8.4g

Strawberry, Spinach, Goat Cheese Salad

Ingredients

  • 8 oz baby spinach, rinsed
  • 2 oz goat cheese crumbled
  • 2 tbs sliced almonds
  • 1 c strawberries, hulled and sliced
  • 4 tbs light poppy seed dressing

Instructions

Toss all ingredients together in a large bowl.

    Hmm… I’ll try this one!!! Just FYI, if you use poppy-seed for anything (including TJ poppy-seed bread), you’ll test positive for opiates (like heroin). Just FYI. 🙂 🙂 A further (and a more sophisticated) test can prove you’re innocent though. But hey, that doesn’t stop me from using poppy seed in my cooking.
