Quick and Easy Dill Lobster Roll

Possibly the best lobster roll you've ever had - fast and easy to make at home.
I’ve always been intrigued by lobster rolls – they make me imagine lunch at the club, summering at the Hamptons, and fashionable parties at beachfront Cape Cods. I haven’t experienced any of these things but still feel the promise popped-collar polos and sockless loafers every time I see a lobster roll on the menu. And I’ve always been disappointed. Not just because I’m not magically transported to someone’s yacht but for legitimate reasons, too. The temperature always seems wrong, they’re drowning in mayonnaise or too dry, often bland or rubbery, and always expensive.

Nevertheless, even after I learned to stop ordering them in restaurants, my passion for sandwiches kept me from giving up on the concept completely.

And I’m glad it did because it turns out lobster rolls can be as delicious and refreshing as I imagined – at a fraction of restaurant prices.

This incredible lobster roll is fast and easy to make at home.
Microwaving the lobster takes just 3-4 minutes and you can toast the bread while it cools. The dill may not be completely traditional but I think it’s as critical as the Old Bay seasoning. The end result is super flavorful without overpowering the lobster and comfortingly toasty while still being refreshing enough for a warm Summer evening.

We served this with a side of fries but it would also be awesome with freshly boiled corn on the cob or a garden salad.

Quick and Easy Dill Lobster Roll

Prep Time: 5 minutes

Cook Time: 5 minutes

Quick and Easy Dill Lobster Roll

Ingredients

  • 4 6-oz lobster tails or any combination that will result in 1 lb cooked lobster
  • 1/2 cup light mayonnaise
  • 2 tablespoons freshly squeezed lemon juice
  • 2 inner celery stalks and leaves, finely chopped
  • 1-1/2 tablespoons chopped fresh dill
  • 1/2 tsp Old Bay seasoning
  • Salt and freshly ground black pepper
  • 4 sandwich rolls, split
  • 2 tbs butter, melted

Instructions

Place the lobster tails on a plate with fans facing inward, cover with plastic wrap, and microwave 3-4 minutes, turning after every minute, until a quick-read thermometer shows 130F. Let cool 5 minutes and remove meat from shells.

Coarsely chop the lobster meat and combine with mayonnaise, lemon juice, celery, dill, and Old Bay seasoning. Season to taste with salt and pepper and let sit 10 minutes to allow the flavors to combine.

Meanwhile, brush the inside of each roll with melted butter and place under the broiler until golden brown, about 4 minutes. Fill with the lobster mixture and serve.
