Radish and Ricotta Baguette with Fresh Herbs and Avocado
This colorful, refreshing sandwich evokes thoughts of Spring but is wonderful any time of year. Feel free to swap out the radish and herbs for the season.
Servings: 1 sandwich
- mayonnaise or butter (optional)
- fresh mint
- fresh dill
- fresh, creamy, whole milk ricotta
- pickled red onions
- watermelon radish thinly sliced
Slice baguettes in half lengthwise and spread bottom half with butter or mayonnaise.
Layer with mint, dill, and avocado.
Spread with ricotta and layer with thinly sliced watermelon radish and pickled red onions.
Top with arugula, season with salt and pepper, and serve.
