This colorful, refreshing sandwich evokes thoughts of Spring but is wonderful any time of year. Feel free to swap out the radish and herbs for the season.

  • baguettes
  • mayonnaise or butter (optional)
  • fresh mint
  • fresh dill
  • avocado
  • fresh, creamy, whole milk ricotta
  • pickled red onions
  • watermelon radish thinly sliced
  • arugula


  • Slice baguettes in half lengthwise and spread bottom half with butter or mayonnaise.
  • Layer with mint, dill, and avocado.
  • Spread with ricotta and layer with thinly sliced watermelon radish and pickled red onions.
  • Top with arugula, season with salt and pepper, and serve.
